Ingredients:

  • For the Stew:
  • 2 tablespoons olive oil

  • 3 cloves garlic, minced

  • 3 Yukon gold potatoes, peeled and cubed
  • 1 red bell pepper, diced
  • 1 zucchini, diced

  • 4 cups vegetable broth (low-sodium)
  • 1 teaspoon dried thyme
  • 1 teaspoon dried oregano

Instructions:

Sauté the Aromatics:

    • In a large pot or Dutch oven, heat the olive oil over medium heat.
    • Add the diced onion and sauté for about 5 minutes until softened.
