Ingredients

  • 1 cup (240g) vegan butter, softened
  • ¾ cup (150g) brown sugar, packed
  • ⅓ cup (67g) granulated sugar
  • ½ cup (120ml) unsweetened applesauce
  • 2 teaspoons vanilla extract
  • 1 ½ cups (150g) rolled oats
  • 1 ½ cups (180g) all-purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon ground cinnamon
  • ¼ teaspoon salt
  • ¾ cup (120g) raisins
  • Optional: ½ cup chopped walnuts or pecans

Instructions

  1. Preheat the Oven:
    • Preheat your oven to 350°F (175°C). Line two baking sheets with parchment paper.
  2. Cream the Butter and Sugars:
    • In a large mixing bowl, beat together the softened vegan butter, brown sugar, and granulated sugar until creamy and well combined.
  3. Add Wet Ingredients:
    • Mix in the applesauce and vanilla extract until fully incorporated.
  4. Combine Dry Ingredients:
    • In another bowl, whisk together the rolled oats, all-purpose flour, baking soda, ground cinnamon, and salt.
  5. Mix Together:
    • Gradually add the dry mixture to the wet ingredients, stirring until just combined. Do not overmix.
    • Fold in the raisins and chopped nuts if using.
  6. Shape the Cookies:
    • Using a cookie scoop or tablespoon, drop rounded balls of dough onto the prepared baking sheets, spacing them about 2 inches apart. Flatten each ball slightly with your fingers.
  7. Bake:
    • Bake in the preheated oven for 10–12 minutes or until the edges are lightly golden. The centers may look soft; they will firm up as they cool.
  8. Cool:
    • Allow the cookies to cool on the baking sheets for about 5 minutes before transferring them to a wire rack to cool completely.
