These vegan brownies are rich, fudgy, and incredibly easy to make. With a perfect balance of sweetness and chocolate flavor, they are sure to satisfy your chocolate cravings. Here’s how to create the best vegan brownies!

Ingredients

  • 4 tablespoons ground flaxseed
  • ½ cup water
  • ½ cup vegan butter, melted (Earth Balance or similar)
  • 1 cup granulated sugar
  • 1 cup brown sugar, lightly packed
  • 1 tablespoon pure vanilla extract
  • 1 cup all-purpose flour
  • 1 cup unsweetened cocoa powder
  • ½ teaspoon salt
  • 1 teaspoon baking powder
  • 1 cup non-dairy chocolate chips (or roughly chopped chocolate)

Instructions

  1. Prepare the Flax Eggs:
    • In a small bowl, mix the ground flaxseed with water and let it sit for about 5 minutes to thicken.
  2. Preheat the Oven:
    • Preheat your oven to 350°F (175°C) and line an 8×8 inch (or 7×11 inch) baking pan with parchment paper.
  3. Mix Wet Ingredients:
    • In a large bowl, whisk together the melted vegan butter, granulated sugar, brown sugar, flax eggs, and vanilla extract until well combined.
  4. Combine Dry Ingredients:
    • Sift in the flour, cocoa powder, salt, and baking powder. Stir gently with a wooden spoon until just combined; be careful not to overmix.
  5. Add Chocolate Chips:
    • Fold in half of the chocolate chips into the batter.
  6. Pour into Pan:
    • Pour the brownie batter into the prepared pan and smooth out the top with a spatula. Sprinkle the remaining chocolate chips on top.
  7. Bake:
    • Bake in the preheated oven for 25–30 minutes or until a toothpick inserted into the center comes out mostly clean (a few moist crumbs are okay).
  8. Cool and Slice:
    • Allow the brownies to cool in the pan for at least 15 minutes before lifting them out using the parchment paper. Let them cool completely on a wire rack before slicing into squares.

Tips for Success

  • Storage: Store brownies in an airtight container at room temperature for up to one week or refrigerate for longer freshness.
  • Customization: Feel free to add nuts or swap out some of the chocolate chips for dried fruit for added texture.
  • Fudginess: For ultra-fudgy brownies, remove them from the oven slightly earlier; they will continue to firm up as they cool.

These vegan brownies are sure to impress anyone who tries them! Enjoy them warm with a scoop of vegan ice cream or on their own as a delicious treat.
