Bulgar Recipe With Veg​

Veggie Bulgur Recipe

Ingredients

  • Bulgur: 250 g (about 9 oz)
  • Bell Pepper: 1, diced
  • Fresh Frozen Peas: 120 g (about 4 oz)
  • Frozen Green Beans: 100 g (about 3 oz)
  • Garlic: 4 cloves, minced
  • Carrot: 150 g (about 5 oz), diced
  • Onion: 150 g (about 5 oz), diced
  • Vegetable Oil: 2 tbsp
  • Butter: 30 g (about 1 oz)
  • Parsley: 10 g (about 2 tbsp), chopped
  • Scallion: 3 stalks, chopped
  • Salt: 1.5 tsp
  • Ground Black Pepper: 0.5 tsp
  • Water: 750 ml (about 3 cups)

  • Saucepan
  • Pan

Instructions

Prepare the Vegetables:

    • Dice all the vegetables finely.

    Cook the Bulgur:

      • In a saucepan, melt the butter with 1 tbsp of vegetable oil over medium heat.
      • Add the bulgur and fry for about 3 minutes.
      • Pour in the water and add 1 tsp of salt. Stir, bring to a boil, then reduce to low heat and cook until all water is absorbed, approximately 20 minutes.

      Sauté the Vegetables:

        • In a separate pan, heat the remaining vegetable oil.
        • Add the diced onion and minced garlic, cooking for about 3 minutes until softened.
        • Stir in the carrot, green peas, green beans, and bell pepper. Season with the remaining salt and black pepper. Cook over low heat for about 10–12 minutes until vegetables are tender.

        Combine and Serve:

          • Once the bulgur is cooked, add it to the pan with the sautéed vegetables. Mix well to combine.
          • Turn off the heat and stir in the chopped parsley and scallion.
          • Serve hot as a main dish or side.

          Tips

          • You can use frozen vegetables if fresh ones are not available; just ensure they are defrosted before cooking.
          • This dish pairs well with grilled meats or can be enjoyed on its own for a vegetarian meal.
