Ingredients

  • 1 (15 oz) can black beans, drained and rinsed

  • ½ cup (40 g) cocoa powder
  • 2 teaspoons vanilla extract
  • ½ cup (45 g) ground oats (gluten-free if needed)
  • ⅓ cup (110 g) maple syrup
  • 1 teaspoon baking powder
  • ¼ teaspoon sea salt
  • ¼ teaspoon espresso powder (optional, enhances chocolate flavor)
  • 2–3 oz (60–90 g) dairy-free chocolate chips (or chopped chocolate)

Instructions

  1. Prepare the Flax Eggs:
    • In a small bowl, mix the ground flaxseed with water and let it sit for about 5 minutes until it thickens.
  2. Preheat the Oven:
    • Preheat your oven to 350°F (175°C). Line an 8×8-inch baking pan with parchment paper, leaving an overhang on two sides for easy removal.
  3. Blend the Ingredients:
    • In a food processor, combine the black beans, peanut butter, cocoa powder, vanilla extract, ground oats, maple syrup, baking powder, sea salt, and espresso powder. Blend until smooth.
    • Add the flax egg mixture and blend again until fully combined.
  4. Add Chocolate Chips:
    • Fold in the dairy-free chocolate chips using a spatula.
  5. Pour into Pan:
    • Transfer the brownie batter to the prepared baking pan and spread it evenly.
  6. Bake:
    • Bake in the preheated oven for 20–25 minutes. For fudgier brownies, bake for a shorter time; for cakier brownies, bake a bit longer.
  7. Cool and Slice:
