Vegetarian Chili Recipe

Ingredients

  • 2 tablespoons olive oil
  • 1 medium onion, diced
  • 1 red bell pepper, diced
  • 2 carrots, diced

  • 1 tablespoon tomato paste
  • 1 (28-ounce) can fire-roasted diced tomatoes
  • 1 (15-ounce) can black beans, rinsed and drained
  • 1 (15-ounce) can kidney beans, rinsed and drained
  • 1 (15-ounce) can pinto beans, rinsed and drained
  • 3 cups vegetable broth
  • 2 tablespoons chili powder
  • 1 tablespoon ground cumin
  • 2 teaspoons dried oregano
  • Salt and pepper to taste
  • 1 cup corn kernels (fresh or frozen)

Optional Toppings:

  • Avocado, diced
  • Fresh cilantro
  • Lime wedges
  • Vegan sour cream or Greek yogurt
  • Tortilla chips

Instructions

  1. Sauté Aromatics:
  • Heat olive oil in a large pot or Dutch oven over medium heat.
  • Add the diced onion, bell pepper, carrots, and jalapeño. Sauté for about 5-7 minutes until the vegetables are softened.
  • Stir in the minced garlic and cook for an additional 30 seconds until fragrant.

  • Add the tomato paste to the pot and stir to coat the vegetables.
  • Pour in the fire-roasted tomatoes, vegetable broth, black beans, kidney beans, pinto beans, corn, chili powder, cumin, oregano, salt, and pepper. Stir well to combine.

  • Let it simmer for about 30 minutes, stirring occasionally until the chili thickens and flavors meld together.

  • Stir in lime juice for added brightness.
