Ingredients
- 1 package (18-count) egg roll wrappers (ensure they are vegan if needed)
- 2 tablespoons sesame oil (or vegetable oil)
- 1 small onion, finely chopped
- 3 cloves garlic, minced
- 1 cup carrots, shredded or julienned
- 1 cup cabbage, finely shredded
- 1 red bell pepper, diced
- 1 cup mushrooms, finely chopped (shiitake or button mushrooms work well)
- 1 cup bean sprouts (optional)
- 3 tablespoons soy sauce (or tamari for gluten-free)
- 1 tablespoon rice vinegar
- 1 teaspoon ginger, grated
- Salt and pepper to taste
- Cooking spray or olive oil (for brushing)
Instructions
- Prepare the Filling:
- In a large skillet, heat the sesame oil over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes.
- Stir in the minced garlic and cook for another minute until fragrant.
- Add the shredded carrots, cabbage, diced bell pepper, mushrooms, and bean sprouts (if using). Cook for about 5–7 minutes until the vegetables are tender.
- Stir in the soy sauce, rice vinegar, grated ginger, salt, and pepper. Remove from heat and let cool slightly.
- Wrap the Egg Rolls:
- Lay an egg roll wrapper on a clean surface with one corner pointing towards you. Place about 2 tablespoons of the vegetable filling near the corner closest to you.
- Fold the corner over the filling, then fold in the sides and roll tightly away from you. Use a little water to seal the edge of the wrapper.
- Repeat with remaining wrappers and filling.
- Bake the Egg Rolls:
- Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.
- Place the egg rolls on the prepared baking sheet. Lightly spray or brush them with cooking spray or olive oil.
- Bake for about 20–25 minutes, flipping halfway through, until golden brown and crispy.
- Serve:
- Serve hot with your favorite dipping sauces such as sweet chili sauce, soy sauce, or homemade peanut sauce.

- Add Protein: Incorporate cooked tofu, tempeh, or edamame for added protein.
- Spice It Up: Add red pepper flakes or sriracha to the filling for some heat.
