Vegan Flan Recipe

This Vegan Flan is a creamy, luscious dessert that captures the essence of traditional flan without using any animal products. It features a rich caramel layer and a smooth custard base made from coconut milk and agar-agar. Perfect for impressing guests or enjoying as a sweet treat!

Ingredients

For the Caramel:

  • ¾ cup granulated sugar
  • 2 tablespoons water

For the Custard:

  • 1 can (13.5 oz) full-fat coconut milk
  • 1 cup oat milk (or any non-dairy milk)
  • ⅓ cup sweetened condensed coconut milk (or homemade vegan version)
  • 1 teaspoon vanilla extract
  • 1 teaspoon agar-agar powder
  • 3 tablespoons cornstarch
  • Pinch of salt

Instructions

  1. Prepare the Caramel:
    • In a medium saucepan, combine the sugar and water over medium heat. Stir until the sugar dissolves.
    • Allow the mixture to boil without stirring until it turns a deep amber color (about 8–10 minutes). Be careful not to burn it.
    • Immediately pour the caramel into the bottom of your flan mold or individual ramekins, tilting to coat the bottom evenly. Set aside to cool and harden.
  2. Make the Custard:
    • In a blender, combine the coconut milk, oat milk, sweetened condensed coconut milk, vanilla extract, agar-agar powder, cornstarch, and salt. Blend until smooth.
    • Pour the mixture into a saucepan and cook over medium heat, whisking constantly until it thickens and starts to bubble (about 5–7 minutes). Make sure to keep stirring to prevent sticking.
  3. Combine and Cool:
    • Once thickened, remove from heat and let it cool for about 10 minutes.
    • Carefully pour the custard over the set caramel in your mold or ramekins.
  4. Chill:
    • Cover with plastic wrap or a lid and refrigerate for at least 4 hours, or overnight, until fully set.
  5. Serve:
    • To unmold, run a knife around the edges of the flan to loosen it. Place a large plate over the top of the mold and quickly invert it.
    • Gently lift off the mold; the flan should slide out easily with the caramel sauce cascading down.
  6. Enjoy:
    • Slice and serve chilled. Optionally garnish with fresh fruit or whipped coconut cream.

  • Agar-Agar: Ensure you use agar-agar powder, not flakes, as they have different setting properties.
  • Sweetness Adjustments: You can adjust the sweetness by adding more or less sweetened condensed coconut milk according to your taste.
