Vegan Tamale Pie Recipe

Ingredients

For the Filling:

  • 1 can black beans, rinsed and drained
  • 1 can vegan refried beans
  • 1 cup diced onion
  • 2 cloves garlic, minced
  • 1 can petite diced tomatoes (14 oz)
  • 8 oz tomato sauce
  • 1 can corn, drained
  • ½ cup black olives, sliced (optional)
  • 1 tablespoon chili powder
  • 1½ teaspoons ground cumin
  • 1 teaspoon salt
  • ¼ teaspoon cayenne pepper (adjust to taste)
  • 1 teaspoon black pepper

For the Cornmeal Topping:

  • 3 cups unsweetened plant milk
  • 2 tablespoons sugar
  • ¾ teaspoon salt
  • 4 tablespoons vegan butter
  • 1 cup cornmeal
  • 3 tablespoons ground flaxseed mixed with 9 tablespoons water (flax eggs)

Instructions

  1. Preheat the Oven: Preheat your oven to 375°F (190°C).
  2. Prepare the Flax Eggs: In a small bowl, mix the ground flaxseed with water. Let it sit for about 5–10 minutes to thicken.
  3. Make the Filling:
    • In a large skillet over medium heat, sauté the diced onion until soft, about 5 minutes.
    • Add the garlic and cook for another minute.
    • Stir in the black beans, refried beans, diced tomatoes, tomato sauce, corn, olives (if using), chili powder, cumin, salt, cayenne pepper, and black pepper. Mix well and cook for about 5–7 minutes until heated through.
  4. Assemble the Pie:
    • Pour the filling into a greased 9×13-inch baking dish.
    • In a separate saucepan over medium heat, combine plant milk, sugar, salt, and vegan butter. Heat until the butter melts.
    • Whisk in the cornmeal and continue stirring until thickened.
    • Spread the cornmeal mixture evenly over the bean filling in the baking dish.
  5. Bake: Bake in the preheated oven for 20–25 minutes, or until the topping is firm and slightly golden.
  6. Cool and Serve: Allow to cool for about 10 minutes before slicing. Serve warm with toppings like avocado slices, vegan sour cream, or salsa.
