These vegan banana brownies are rich, fudgy, and incredibly easy to make! The combination of ripe bananas and cocoa powder creates a deliciously moist brownie that everyone will love. Here’s a simple recipe to whip up a batch of these delightful treats.

Ingredients

  • 1 cup (about 2 medium) ripe bananas, mashed
  • 1/3 cup (75g) vegan butter, melted
  • 1/2 cup (100g) brown sugar
  • 1/4 cup (50g) granulated sugar
  • 1 teaspoon vanilla extract
  • 1/2 cup (40g) unsweetened cocoa powder
  • 2/3 cup (85g) all-purpose flour (or oat flour for a gluten-free option)
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/2 cup (90g) vegan chocolate chips (plus more for topping, optional)

Instructions

  1. Preheat the Oven:
    • Preheat your oven to 350°F (175°C). Grease an 8×8 inch baking pan or line it with parchment paper for easy removal.
  2. Prepare the Wet Ingredients:
    • In a large mixing bowl, combine the mashed bananas, melted vegan butter, brown sugar, granulated sugar, and vanilla extract. Mix well until smooth.
  3. Combine Dry Ingredients:
    • In another bowl, whisk together the cocoa powder, flour, baking powder, and salt.
  4. Mix Together:
    • Gradually add the dry ingredients to the wet mixture, stirring until just combined. Be careful not to overmix.
    • Fold in the vegan chocolate chips.
  5. Pour into Pan:
    • Pour the brownie batter into the prepared baking pan and spread it evenly. If desired, sprinkle additional chocolate chips on top.
  6. Bake:
    • Bake in the preheated oven for 26–30 minutes or until a toothpick inserted into the center comes out mostly clean (a few moist crumbs are okay).
  7. Cool and Slice:
    • Allow the brownies to cool in the pan for about 10 minutes before lifting them out using the parchment paper. Let them cool completely on a wire rack before slicing into squares.

Tips for Success

  • Use Ripe Bananas: The riper the bananas, the sweeter and more flavorful your brownies will be.
  • Storage: Store leftovers in an airtight container at room temperature for up to three days or refrigerate for longer freshness.
  • Customization: Feel free to add nuts or dried fruit for added texture and flavor!

These vegan banana brownies are not only delicious but also a great way to use up overripe bananas! Enjoy your fudgy treat with a glass of plant-based milk or as a sweet snack anytime!
