Ingredients

  • Tomatoes: 3 large ripe tomatoes, sliced (or 1 pint of cherry tomatoes, halved)
  • Vegan Mozzarella: 8 ounces of fresh mozzarella, sliced or mini mozzarella balls
  • Basil: A handful of fresh basil leaves
  • Olive Oil: 2 tablespoons of extra virgin olive oil
  • Balsamic Vinegar: 1 tablespoon (optional for drizzling)
  • Salt and Pepper: Flaky sea salt and freshly cracked black pepper to taste

Instructions

Prepare the Ingredients:

    • If using large tomatoes, slice them into even rounds. For cherry tomatoes, halve them.
    • Slice the mozzarella into rounds or use mini mozzarella balls.
