1. Vegan Breakfast Sausage with Lentils and Apples

Ingredients:

  • 8 oz cremini mushrooms, quartered
  • 1 can (19 oz) lentils, drained and rinsed
  • 1 tbsp extra virgin olive oil
  • ½ small onion, minced
  • 3 cloves garlic, minced
  • 3 tbsp maple syrup
  • 1 apple, peeled and grated (excess liquid squeezed out)
  • 2 tsp gluten-free tamari or coconut aminos
  • 1½ tbsp fresh sage, minced
  • 1½ tbsp fresh rosemary
  • 1½ tbsp fresh thyme
  • 6 tbsp oat flour (gluten-free if desired)
  • Salt and pepper to taste

Instructions:

  1. Preheat the oven to 425°F (220°C).
  2. Pulse the mushrooms in a food processor until finely chopped. Squeeze out excess moisture using a cheesecloth.
  3. Puree half of the lentils in the food processor.
  4. Heat olive oil over medium-low heat, add onions, and cook until caramelized (about 30 minutes).
  5. In a bowl, combine all ingredients, mixing well.
  6. Form the mixture into patties and place on a baking sheet.
  7. Bake for about 25 minutes, flipping halfway through[1].

Ingredients:

  • 1 cup vital wheat gluten
  • 1 can chickpeas, drained and rinsed
  • ½ cup vegetable broth

  • Spices: smoked paprika, garlic powder, onion powder, ground sage

Instructions:

  1. In a food processor, blend chickpeas with broth, soy sauce, maple syrup, and vinegar until smooth.
  2. Add vital wheat gluten and spices; pulse until combined.
  3. Knead the dough briefly on a flat surface until firm.
  4. Shape into sausages or patties.
  5. Steam for about 30 minutes or bake at 350°F (175°C) for about 25 minutes.

3. Mushroom & Walnut Breakfast Sausage

Ingredients:

  • ½ – ¾ cup walnuts, soaked overnight
  • 200 grams baby Bella mushrooms (about 2 cups)
  • 1 cup rolled oats
  • ½ cup diced onion
  • 3 tbsp milled flaxseeds
  • 4 tbsp nutritional yeast
  • Seasonings: onion powder, garlic powder, cumin, fennel seeds, ground sage

Instructions:

  1. Preheat the oven to 350°F (175°C).
  2. Combine all sausage ingredients in a food processor; pulse until mixed but not pureed.
  3. Form into patties and place on a greased baking sheet.
