Here’s a delicious recipe for Balsamic Glazed Oyster Mushrooms that highlights the unique flavor and texture of oyster mushrooms. This dish is versatile and can be served as a main course or a side.

Balsamic Glazed Oyster Mushrooms

Ingredients:

  • 1½ lbs oyster mushrooms, cleaned and whole
  • 5 tablespoons olive oil
  • ¾ teaspoon cumin
  • ¾ teaspoon coriander
  • ¾ teaspoon garlic powder
  • ¾ teaspoon chili powder
  • ¾ teaspoon turmeric
  • ¾ teaspoon smoked paprika
  • ½ teaspoon red pepper flakes (adjust to taste)
  • ½ teaspoon kosher salt (or to taste)
  • Juice of 1 lemon
  • 3 tablespoons balsamic glaze

Instructions:

Preheat the Oven:

    • Preheat your oven to 400°F (200°C).

    Prepare the Mushrooms:

      • Tear the oyster mushrooms into large, flat chunks resembling steaks. This will help them cook evenly and absorb the flavors.

      Sear the Mushrooms:

        • Heat a large skillet over medium heat and add 2 tablespoons of olive oil.
        • Once hot, lay the oyster mushrooms flat in the skillet. Cook for about 3-4 minutes on each side until they are golden brown and have released their moisture.

        Make the Spice Mix:

          • In a small bowl, whisk together the remaining olive oil, cumin, coriander, garlic powder, chili powder, turmeric, smoked paprika, red pepper flakes, and kosher salt.

          Coat the Mushrooms:

            • Brush each side of the seared mushrooms with the spice mix to ensure they are well coated.

            Prepare for Baking:

              • Place the seasoned mushrooms on a parchment-lined baking sheet. Layer them in a “shawarma shape” if desired for presentation.

              Bake:

                • Bake in the preheated oven for about 10 minutes.
