Ingredients

  • 8 large portobello mushrooms, cleaned and stems removed
  • 2 tablespoons olive oil
  • 1 small yellow onion, diced
  • 2 cloves garlic, minced
  • 1 medium zucchini, diced
  • 1 red bell pepper, diced
  • 1 cup fresh spinach, chopped
  • 1 cup cooked quinoa (or rice)
  • 1/2 cup breadcrumbs (gluten-free if needed)
  • 1/4 cup grated Parmesan cheese (or vegan cheese for a dairy-free option)
  • 1 teaspoon dried oregano
  • 1 teaspoon smoked paprika
  • Salt and pepper to taste
  • Fresh parsley, for garnish

Instructions

  1. Preheat the Oven:
    • Preheat your oven to 375°F (190°C). Line a baking sheet with parchment paper.
  2. Prepare the Mushrooms:
    • Remove the stems from the portobello mushrooms and gently scoop out the gills using a spoon. Lightly brush the insides with olive oil and season with salt and pepper.
  3. Sauté the Vegetables:
    • In a skillet, heat the olive oil over medium heat. Add the diced onion and sauté until translucent, about 5 minutes. Stir in the garlic and cook for another minute until fragrant.
    • Add the zucchini and bell pepper, cooking until tender, about 5–7 minutes. Finally, add the spinach and cook until wilted.
  4. Mix the Filling:
    • In a large bowl, combine the sautéed vegetables with cooked quinoa (or rice), breadcrumbs, Parmesan cheese, oregano, smoked paprika, salt, and pepper. Mix well until combined.
  5. Stuff the Mushrooms:
    • Divide the filling evenly among the portobello caps, pressing down gently to pack it in.
  6. Bake:
    • Place the stuffed mushrooms on the prepared baking sheet and bake for about 25–30 minutes, or until the mushrooms are tender and the tops are golden brown.
  7. Serve:
    • Garnish with fresh parsley before serving. Enjoy warm as a main dish or appetizer!

Tips for Customization

  • Add Protein: Mix in cooked lentils or chickpeas for added protein.
  • Spice It Up: Add red pepper flakes for some heat or include your favorite herbs.
  • Cheese Options: Use different cheeses like feta or mozzarella for varied flavors.
