    • ¼ cup shredded coconut
    • ¼ cup dried fruit (like cranberries or raisins)

Instructions

  1. Mix Ingredients:
    • In a large mixing bowl, combine the gluten-free rolled oats, nut butter, honey (or maple syrup), chocolate chips, vanilla extract, and salt. If you’re using any optional add-ins, include them as well.
  2. Combine Thoroughly:
    • Stir the mixture until all ingredients are well combined. The mixture should be sticky and hold together.
  3. Form the Bites:
    • With clean hands, scoop out about 1 tablespoon of the mixture and roll it into a ball. Repeat until all the mixture is used.
  4. Chill:
    • Place the energy bites on a baking sheet lined with parchment paper and refrigerate for at least 30 minutes to firm up.
