Vegan Salted Almond Biscotti Recipe

Ingredients

  • 2 cups all-purpose flour

  • 1 teaspoon almond extract
  • ⅓ cup unsweetened applesauce
  • 1 cup sliced raw almonds
  • Coarse sea salt for sprinkling (optional)

Instructions

  1. Preheat the Oven:
    • Preheat your oven to 350°F (175°C) and line a large baking sheet with parchment paper.
  2. Mix Dry Ingredients:
    • In a medium bowl, whisk together the flour, baking powder, and fine sea salt.
  3. Mix Wet Ingredients:
    • In a large bowl, combine the sugar, melted coconut oil, vanilla extract, almond extract, and applesauce. Mix until well combined.

    • Carefully transfer the logs to a cutting board and slice them diagonally into ¾-inch thick pieces. Arrange the slices cut side down on the baking sheet.
    • Return to the oven and bake for an additional 10–15 minutes, flipping halfway through, until crisp and lightly golden.
  8. Cool and Serve:
    • Let the biscotti cool completely on a wire rack. If desired, sprinkle with coarse sea salt before serving.
